Panna Cotta, this is one of my favourite desert recipes.
It is a creamy, vanilla flavoured dessert. One taste of the heavenly flavour and you will be instantly transported to another world; you won’t be able to believe you have lived without this for so long! The best thing is, it is so simple to make!

What you will need, this will serve 6:
© 1 ½ cups of cream (375mL)
© 1 ½ cups of milk (375mL)
© 1 Vanilla bean
© ½ cup of caster sugar (115g)
© 2 ½ tsp gelatine powder
© Sliced strawberries and blueberries to serve. However, you can use anything you like, including passionfruit juice or mango, etc.
How to do it:
1. Place the cream and milk in a saucepan. Use a small sharp knife to split the vanilla bean end-to-end and scrape the seeds from inside the bean. Add the seeds and bean to the saucepan.
2. Slowly bring to the boil over a medium heat.
3. Remove from the heat and set aside for 10 minutes.
4. Remove the bean from cream mixture.
5. Add sugar and return to a low heat. Cook, stirring, for 5 minutes, or until sugar dissolves.
6. Place 2 tbs of boiling water in a small heatproof bowl. Sprinkle the gelatine into the water.
7. Bring a small saucepan of water to boil. Remove from heat. Sit the bowl of gelatine in the water and stir until dissolved. Cool slightly then stir into the creamy mixture.
8. Lightly oil 6 x ½ cup (125mL) ramekins. Place on a tray.
9. Pour in cream mixture.
10. Refrigerate for 4 hours.
11. When serving, break the seal by inserting a small knife between the Panna Cotta and the mould.
12. Turn onto a serving plate and shake to release.
13. Serve dish with fresh berries, or anything else you desire.
